Buckwheat Crumble, a delicious vegetarian suggestion for Thursday, March 12th!

Our chef Yanis, author of this new recipe, reveals its history and secrets:

“Buckwheat crumble is a vegetarian recipe that I discovered while browsing a site dedicated to canteens with a vegetarian approach.

We have thought about and carried out various tests to improve the recipe and above all to maximise the chances that the children will like it:

-Mediterranean vegetables were preferred to form the basis of the recipe: tomatoes, onions, garlic, courgettes, peppers, carrots. They will be cooked in the style of a ratatouille.

-Tofu has been replaced by a mixture of two cheeses (Emmental and Parmesan) which will be used as a topping to make the crumble more attractive and tasty.

-Greek pasta has been added to the recipe, the idea is to alternate in successive layers vegetables and pasta like a lasagna and then finish with the buckwheat cheese topping.”
